1.5 lbs chicken
1 red bell pepper, cut into chunks
1 yellow bell pepper
1/2 lb mushrooms, quartered
1 can diced tomatoes, drained
6 red potatoes
3 T olive oil
2 T balsamic vinegar
1 T chopped fresh or 1 tsp dried rosemary
salt and pepper
1-1/2 T honey

Directions:
Preheat oven to 425. In a large, shallow baking pan toss together all ingredients, but chicken and honey. Dredge chicken into the bottom of the pan to get juicy. Sprinkle with salt and pepper and honey. Bake 50-60 minutes until chicken is done.
