1 (16 oz.) pkg. uncooked rotini pasta
1 lb. ground Italian sausage
1 (24 oz.) jar of pasta sauce
1 (16 oz.) container cottage cheese or ricotta
1 (2-1/4 oz.) can sliced black olives, drained
1 (4 oz.) can of mushrooms, drained
1 small chopped green bell pepper
1/2 small onion, chopped
1 (12 oz.) shredded mozzarella cheese
2 (3 oz.) packages of sliced pepperoni

Preheat oven to 350º. Lightly grease a 9 x 13" baking dish. Boil pasta to al dente. Brown sausage, onion and bell pepper in a skillet until meat is brown and vegetables are tender; drain. Mix meat and pasta together and pour into bottom of casserole dish.
In a small bowl mix cottage cheese/ricotta, olives, mushrooms and mozzarella cheese. Spoon cheese mixture over the meat and pasta.
Bake for 25 to 30 minutes until bubbly and light brown. While baking casserole, heat pepperoni in the microwave for 30 to 40 seconds and drain on a paper towel. Add the pepperoni to the top of the casserole immediately upon taking it out of the oven. Baking the pepperoni in the casserole makes it greasy.
