3 apples, sliced into thin circles, core removed
2 small red onions, thinly sliced
1/2 cup dried cranberries
Arugula
Spinach
Spiced nuts (recipe under Misc.)
Goat cheese, crumbled
Dressing:
1 orange, zested and juiced
2 tbsp. red wine vinegar
2 tbsp. olive oil
1 tbsp. honey
1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
In small bowl combine orange juice, zest, vinegar and honey; emulsify in the olive oil (to emulsify, you must quickly whisk the base while slowly pouring in the olive oil). Season with the salt and pepper.
In hot pan, add onions. Allow them to acquire color and become tender, season with salt and pepper. Set aside to cool before adding to salad.
Wash apples, de-core and slice into thin circles. Toss them with olive oil and place on a hot grill. Remove to a plate and cool.
Mix washed greens in a bowl with half onions, dressing, salt and pepper. Make sure not to add dressing too soon before it is time to eat because it will burn the greens and make them limp. Spread greens on platter and sprinkle with remaining onions, grilled apples, cheese and spiced nuts.
