1 lb large sea scallops
2/3 c Panko breadcrumbs
1/4 c grated Parmesan cheese
1/4 c chopped parsley
juice and zest from 1 lemon
1/4 c butter, melted
2 Tbsp white wine

Directions:
Directions:
Coat a shallow baking dish with olive oil and set aside. Mix the crumbs, cheese, parsley, lemon zest and salt and pepper to taste in a small bowl. Roll each scallop in this mixture and arrange them in a single layer in the baking dish. Whisk the butter, lemon juice and wine together and pour this mixture over the scallops. Sprinkle any remaining crumb mixture on top. Bake for 15 minutes in a 400 degree oven (do not overcook). Serve immediately.
