1 lobster per person (must be alive and kicking)

butter (optional)

Bring a very large pot of salted water to a full rapid boil (1 Tbsp salt per quart of water). Put whole live lobsters, head first, into boiling water to cover. Cover the pot, bring back to a simmer and boil 12 to 15 minutes for a one-and-one-half to two-pound lobster. When done, remove from water with tongs.
Serve one per person on a plate, with lobster 'crackers' for each person. Have a couple of large bowls on the table for discarded shells. Optional: melt butter and serve in several small bowls around the table for dipping.
