1 1/2 # chicken breasts or chicken tenders
1/2 c flour
1 t salt
1/4 t pepper
3 T olive oil
1 can (14 oz) chicken broth
1 can (14 oz) diced tomatoes, undrained
1 c Sliced fresh mushrooms (optional)
1 medium onon chopped
1 pkg (3oz) thinly sliced prosciutto, coarsely chopped
1 T diced pimentos (optional)
1 t minced garlic
1/2 t Italian seasoning

Hot cooked pasta
Grated Parmesan cheese

Cut chicken in bite size pieces. In a large resealable plastic bag, combine flour, salt, and pepper. Add Chicken, a few pieces at a time, and shake to coat.
In a large skillet, brown chicken in oil in batches. Transfer to a 5qt slow cooker.
Stir in the broth, tomatoes, mushrooms, onion, prosiciutto, pimentos, garlic and Italian seasoning. Cover and cook on low for 4 to 4 1/2 hrs or until chicken is no longer pink. Serve with a slotted spoon over cooked pasta. sprinkle with Parmesan cheese.
