5-6 lbs chuck roast
4 stalks celery chopped
1 large sweet yellow onion chopped
1 large red bell pepper chopped
3 T vinegar
3 T BBQ sauce
1 tsp Franks hot sauce
1 tsp chili powder
1 tsp salt
1 tsp ground black pepper
1 cup water

Directions:
Put chopped veg on bottom of large crock pot. Mix in all ingredients except meat and combine well. Put beef on top of veg mix. Cook on high for 6-8 hours. If there is too much liquid, scoop some out, however, you want it to be a bit runny. Shred beef with forks, discarding fat as you go. Serve on Kaiser or Sam's yeast rolls or is also good on noodles.
