1 onion, chopped
1 bay leaf
2 cups lentils, well rinsed
2 cans (29 oz each) tomato sauce
3 cloves garlic, minced
1 dried red pepper, crumbled
4 cups broth
2 tsp. dried oregano
cooked pasta or whole grains

Directions:
Directions:
Bring onion, garlic, bay leaf, pepper, lentils and broth to a boil in a large pot. Simmer until lentils are tender (about 20-30 minutes). Drain off excessive liquid and stir in tomato sauce and oregano. Simmer 10 minutes. Serve over pasta or grain of your choice.
