1/4 cup butter
1/4 cup flour
2 1/2 cups milk
1/4 tsp. pepper (or sprinkle on top)
dash oregano
1 cup shredded sharp cheddar cheese (~1/2 pound)
1/4 cup Parmesan cheese
2 cups tuna (2-3 cans), drained

Directions:
Directions:
Melt the butter. Stir in the flour.
Slowly add milk, stirring constantly until it thickens.
Add the pepper and oregano. (I add a lot of oregano.)
Add the mozzarella cheese a little at a time, stirring as you go.
Add the Parmesan cheese.
When it's all melted together add the tuna.

Serve over rice.
