Insanely Good Turtle Cookies Recipe

Cookie Dough:
1 cup flour
2/3 cup sugar
1 stick unsalted butter
1/3 cup good cocoa
1/4 tsp salt
1 egg yolk (save the white and add another white to it)
2 Tbls milk
1 teaspoon vanilla

2 egg whites beaten till frothy
Approx 2 cups of finely chopped pecans

14 caramels
3 tbsp cream

Melted chocolate for drizzling

Directions:

Beat butter and sugar together till light
Add yolk, vanilla milk
Add dry ingred., flour, cocoa, salt
Wrap dough and chill for 1 hour

Roll dough into 1 inch balls, dip in egg whites and then pecans, place them on cookie sheet with silpat
Make an indention in each cookie using a 1/2 teaspoon measuring spoon
Bake for 12 minutes at 350
When the cookies come out of the oven you might want to lightly tap the indention you made to make sure you have room for caramel.

Melt caramels with cream and fill each hole with caramel
Cool for about 15 minutes on rack

Drizzle with melted chocolate
