1-8 inch spring form pan
2 packages of wafer cookies (Safeway carries them, Edelwise in Calgary)
2-250 ml packages of lite cream cheese (you can use full fat version, too)
¾ Cup brown sugar
1 cup whipping cream, whipped
1 - 7 g envelope of gelatin
½ cups liqueur, Bailey’s is the original fave, you can also use Kahlua, crème de menthe, Cointreau, Chambord or any other flavor that is yummy with chocolate
6 oz bittersweet baking chocolate, melted and cooled (I used Callabaut chocolate for the wedding, makes a firmer cake, but using Baker’s Chocolate is what the recipe calls for and is to-die-for!)

• Line spring form pan with parchment/wax paper
• Line the outside rim of the spring form pan with the wafer cookies, set aside
• Sprinkle gelatin over liqueur and let it sit for at least 5 minutes. Then heat gently, until the gelatin melts into the liqueur. I used the microwave on a low setting (Power level 3 of 10) for a minute, heated just enough to activate the gelatin, not enough to lose the alcohol!), let cool a bit, but not solidify
• Melt chocolate and allow to cool, but not solidify
• Put cream cheese in mixing bowl and blend cream cheese with a paddle/regular beaters, beat for about 2 minutes
• Add brown sugar, beat for another 2 minutes till light and fluffy
• Beat in liqueur/gelatin mix
• Take whipped cream and fold into the cream cheese mixture
• Set aside 1 cup of whipped cream mixture
• Take cooled, melted chocolate and fold into whipped cream mix. If the chocolate is not cooled enough, you will end up with chunks of chocolate, instead of a smooth blend. Set aside ½ cup of the chocolate mix for decoration.
• Spread the chocolate mix in the bottom of the pan
• Spread the reserved whipped cream mix on top of the chocolate mixture
• Drizzle (might need a spoon) the reserved chocolate mixture on top of the top layer
• Using a thin knife or fat tooth pick, run it thru the cake to create an interesting design
• Cover and refrigerate for 4 hours, or overnight
• Keep away from Joanne (or she will get a 3 to 4 cookie slice!) and enjoy!
