1 12oz can evaporated milk
2 cup water
1 1/12 cup sugar
dash of salt
3 yolks
3/4 cup self rising flour
1 tsp vanilla
1 stick butter
3 large bananas
juice from one lemon
l regular box of vanilla wafers
3 egg whites
3 tbsp powdered sugar

In large microwave safe bowl combine can of evaporated milk,1 cup water and sugar stirring to mix well. Cook in microwave on high for three minutes or until very hot but not boiling.
While mixture is cooking combine egg yolks, 1 cup water and flour in blender and blend well until all lumps are gone. Pour half cup of hot mixture into egg yolk mixture and stir. Slowly pour all of egg yolk mixture into hot mixture while constantly stirring to mix well. Add vanilla and mix well. Cook in microwave at 1 minute intervals stirring well at the end of each minute with wisp to mix well. When mixture has thickened add stick of butter and stir until butter has melted. Set aside to cool slightly stirring occasionally.
In a large ovenproof serving bowl slice bananas and toss with lemon juice.
Add vanilla wafers to bananas and stir to mix. Add pudding and stir to mix in bananas and vanilla wafer.
In bowl beat egg whites until soft peaks form. Add powdered sugar one tablespoon at a time until well mixed and stiff peaks form. Spread egg whites over pudding and place in a preheated 350º oven for 10 to 15 minutes or until browned on top.
This pudding recipe can be used to make coconut cream pies by adding coconut to pudding after it has thickened. It can also be used to make chocolate pies by adding 1/2 cup cocoa and 1/2 sugar to milk. sugar and water mixture. Makes one deep dish pie or two regular pies.

This was always a favorite dessert for our family. My mom often made it for church socials and for family gathering. I make it for friends and family today still using the exact same recipe written on the 3 x 5 index cards that I copied from mom's hand written recipe well over 35 years ago. The only change is that I cook it in the microwave and she cooked it on the stove top.
