1 c. sliced onion
6 tbsp. butter
4-minute or sirloin steaks
1/4 c. flour
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dry mustard
2 c. buttermilk
4 c. sliced potatoes
1 tbsp. chopped parsley (optional)

Directions:
Directions:
Sauté onion in butter until tender, remove from skillet. Brown meat in same skillet, remove. To the drippings, add flour, salt, pepper and mustard, stirring to blend. Remove from heat. Gradually stir in buttermilk and return to heat. Cook, stirring until thickened. In a buttered 9x13 pan, layer potatoes, steaks and onions, pour sauce over meat. Cover tightly with foil and bake at 350º F for 1 hour and 15 minutes.
