2 1/2 cups warm water
1/4 cup honey
3 1/3 cups bread flour
2 1/2 cups whole wheat flour
1 packet instant dry yeast
1 Tbsp. kosher salt
Black sesame seeds, or other seeds

Directions:
Directions:
Combine flours and salt in a bowl. In a separate bowl mix warm water, honey and yeast. Gradually add liquid to flour mixture and mix on medium speed (with dough hook) for 8 minutes. Cover bowl and let rise about 45 minutes.
Place dough on a floured board and stretch slightly, fold in thirds and put back into the bowl. Cover and allow to rise for 15 minutes. Cut dough in
half, and with floured hands, stretch sides under to form a round smooth ball. Place dough on a baking stone sprinkled with corn meal to prevent
sticking. Sprinkle dough generously with water. Cover generously with seeds. Allow to rise 60 minutes. Slash the top of dough 3 times about 1/2 inch deep, and again, sprinkle generously with water. Allow to rise 10
more minutes. Preheat oven to 450º. Place a tray of 3 cups of water on the bottom shelf of the oven to make steam. Remove tray of water after
fifteen minutes. Bake for another 15-20 minutes.
