1 tbsp butter
1 onion, chopped
3 celery stalks, finely chopped
2 carrots, finely diced
1 cup fennel bulb, finely diced
2 cups ham, diced
4 cups chicken or vegetable broth
4 cups water
1 can 796 mL diced tomatoes
1/2 cup long-grain rice
1.5 cups cottage cheese (or sub feta)
1 cup frozen peas
1 cup corn kernels
freshly ground pepper, to taste
chopped fennel leaves, to taste

In a large saucepan, melt butter, then brown vegetables for 5 min. Add ham cubes then cook 2 more min. Pour broth, water and diced tomatoes with their juice into saucepan. Bring to a boil and add rice. Cover and let simmer on low heat for 40 min.

Meanwhile, remove cottage cheese from fridge and bring to room temp. Add peas and corn and cook for 5 min or until heated through.

Garnish with cottage cheese and fennel leaves and serve.
