Ingredients: Spanish olive oil onions tomatoes garlic good Spanish olives, I used picante from the market right across from the apartment we rented. red or white Spanish wine, rRoja is my choice, Campo Viejo to be exact. pasta, any shape that is short and works for your taste and salt and pepper to taste. They really don't use much pepper in Spain, but I like it. Parmesan cheese or any good hard Spanish cheese fresh basil or arrugula

Directions:ŠJust kidding with the name but we are in Madrid and I just made this for dinner-it tasted great! Use any quantity you want for the number of people. Saute the onions in a little good Spanish olive oil and cook until translucent. Add some chopped tomato, garlic and wine to the onions and cook while the pasta water boils and cooks the pasta. When al dente, toss the cooked pasta with the tomato mixture, a few handfuls of arugula and some of the pasta water. Top with some grated or shredded Parm cheese and some sliced or chopped olives of desired. This pasta can be made in any kitchen, in any part of the world, using local, fresh ingredients. You can also make this more substantial with the addition of meats or fish. The Iberian ham or langostino from here would be great. Enjoy with a bottle of Rioja, just like we have. Tomorrow we with the Royal Palace in Madrid. Churros and Chocolata for breakfast! |
