"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

1/2 cup cold water
3 egg whites
1 teaspoon vanilla
chopped nuts (optional)

Directions:
Place sugar, syrup, and water in pan over slow fire; stir only until sugar is dissolved. Cook until forms soft ball in cold water. Beat egg whites until stiff (I add a little cream of tartar to egg whites prior to beating) continue heating and pour half the syrup slowly over egg whites. Cook the rest of the syrup until it forms a hard ball in cold water. Add this syrup gradually to the syrup and egg white mixture you are heating. Add vanilla and nuts. Continue heating until thick enough to drop from a spoon. Place by spoonful on wax paper. Makes 35-40 pieces.
