2 whole 3 pound chickens
1 cup dry sherry
½ tsp curry
½ cup chopped celery
2½ cups water
1½ tsp salt
1 sliced onion
1 pound fresh mushrooms
1 cup sour cream
2 packages Uncle Ben's Long Grain & Wild Rice (not instant)
¼ cup margarine
1 can Cream of Mushroom soup

Directions:
Directions:
Place chickens, sherry, curry, celery, water, salt and sliced onion into a deep kettle and bring to a boil. Reduce heat and simmer for an hour. Remove chicken and strain broth. Refrigerate both at once. After cooled, remove chicken from bones and cut into bits size pieces.

Wash and pat dry the mushrooms. Sauté in margarine until golden brown. Separate stems and caps and save enough caps for top of casserole.

Use strained chicken broth to cook rice and add water if necessary to make enough liquid to cook per package directions for FIRM rice.

When rice is cooked blend in sour cream and mushroom soup.
Combine chicken, rice and mushrooms in a 4 quart casserole. Bake at 350º for one hour. Serves 6-8. It is WONDERFUL!
