1 kleines Lorbeerblatt

Die gepökelten Eisbein waschen und in reichliche heissen Wasser mit Zwiebel, Pfeffer und Gewürzkörnern und Lorbeerblatt zugedeckt in 60-70 minuten langsam weich kochen. Vorsicht mit den Salzen. Mit salzkartoffeln, Sauerkraut und Erbsenbrei oder Senf und Meerrettich anrichten.

Some pepper and spice grains
1 small bay leaf

Wash the pickled knuckle of pork and cook slowly, covered in soft ample hot water with onion, pepper and spice seeds and bay leaf in 60-70 minutes. Be careful with the salt. Serve with boiled potatoes, sauerkraut and mashed peas or mustard and horseradish.
