6 baking potatoes
1 Tbsp. garlic flavored olive oil
1 container cheddar and monterey jack cracker spread, like Philadelphia]
2 Tbsp. chopped sun-dried tomatoes
1 tsp. mild all -purpose seasoning

Directions:
Directions:
Heat oven to 350º. Using fork, pierce potatoes. Rub potatoes with olive oil. Bake 1 hour or until fork tender.

In small bowl, combine cheese spread, tomatoes, and seasoning.

Using a paring knife, cut deep parallel slices (not all the way through) in each potato. Stuff slices with cheese-tomato mixture. Place potatoes on baking sheet; cook 2 minutes, or until cheese is melted and slightly crispy.
