Shredded Potatoes Au-Gratin Recipe

6 medium white potatoes
1/3 cup chopped onion
6 Tbsp. butter, divided into 4 and 2 Tbsp.
2 cups cheddar cheese, shredded
2 cups sour cream

Directions:
Directions:
Boil potatoes in skins. Chill, peel and shred.

Saute onion in 4 tablespoons of butter. Add to potatoes. Stir in cheese. Now fold in sour cream.

Place in greased casserole and top with remaining butter. Bake at 350º for 30 minutes.

I haven't tried with frozen hash brown potatoes, but I believe they could be substituted to cut time if needed. Just a thought.
