3 lbs ground beef
2 eggs, beaten
1/4 cup grated onion
1 tsp. salt
1/8 tsp. pepper
1 can tomato soup
crushed saltines to make meat mixture hold together

Topping:
3 Tbsp brown sugar (I use the splenda blend now)
1/4 cup ketchup
1/4 tsp. nutmeg
1 tsp. dry mustard

Directions:
Directions:
Mix meatloaf ingredients and then press into large, black, castiron skillet. Then mix topping and spread on top. Topping can be doubled if you like a lot of topping.

Bake in oven at 350º around 1 hour.

Personal Notes:
Personal Notes:
Always makes me think of mom and has ruined all other meatloafs for me. The topping however, comes from a friend in Wisconsin. I change it out between this topping and the way mom used to keep a little of the tomato soup and spread that on top. The brown sugar one tastes like bbq sauce, and mom's is more tomato in flavor. Never had leftovers of this in fridge for more than 24 hours.
