1 dozen large eggs
2/3 cup silken tofu, drained
1 T. mayonnaise
1 T. Dijon mustard
1/2 tsp. hot pepper sauce, plus more to taste
2 tsp. prepared horseradish
2 T. chopped fresh chives, plus more for garnish
Salt and freshly ground black pepper to taste
1/4 tsp. paprika

Boil eggs, shell and half.
In small mixing bowl add yolks and the rest of ingredients. Mix and add to baggie that has corner snipped, pastry tip inserted, then add mixture and squeeze into egg whites.
Top with sprinkle of paprika and chives.
