3 eggs
1 1/4 cups milk
2/3 cup flour
1/3 cup sugar
1 tsp rum extract
1/8 tsp. salt
3 kiwi fruit, peeled and sliced
Whipped cream for topping

Directions:
Directions:
Beat eggs until foamy. Add next 5 ingredients. Pour into a 9" quiche dish or pie pan. Arrange kiwi slices over batter and press them down gently. Bake at 350º for about 40 minutes or until a knife inserted in the centre comes out clean. Let stand for 15 minutes. before cutting into wedges. Garnish with whipped cream and extra kiwi if desired.
Variation: Use vanilla & 1/4 tsp. nutmeg instead of rum & use 1 1/2 cup fresh raspberries instead of kiwi.
