2 c. Sugar
1 c. Oil
3 c. Flour
2 c. Grated Carrots
1 tsp. Baking Soda
1 tsp. Salt
2 tsp. Cinnamon
1/2 c. Nuts
1/2 tsp. Vanilla Extract
3 Eggs Beaten
1 Small Can Crushed Pineapple

~Frosting~
1 lb. Powder Sugar
1/2 Stick Softened Butter
3 oz. Cream Cheese Softened
1 tsp. Vanilla Extract
1/4 c. Chopped Pecans

Directions:
Directions:
Cream sugar and oil, beat in eggs, sift flour, baking soda, and cinnamon, then add in alternately carrots and pineapples. Mixing well add in nuts and vanilla. Pour into greased and floured pan. Bake at 350º for 25 - 30 minutes.
~Frosting~
Cream butter and cream cheese, mixing in powder sugar. Mix well add in vanilla and nuts
