1 Can diced tomatoes
1/2 Yellow Onion Diced
3 Chopped Garlic Cloves or 2 Tsp Jar Chopped Garlic
1/4 Cup Chopped Sun Dried Tomatoes
1/2 Cup Chopped Marinated Artichoke Hearts
4 Large Basil Leaves Julienne
1/4-1/2 cup cubed fresh Mozzarella
Romano cheese for garnish
1 Pound Large Shrimp cleaned or Chicken Breast Diced (Both are optional)
1/4 Cup Good Olive Oil
1-2 tbsp butter
1 Pound Thin Spaghetti

Boil 8 quarts of water. Cook as directed. While the pasta is cooking begin the sauce.
Coat bottom of large skillet with Olive Oil. Add the chopped onion and saute until tender. Add the garlic and saute for a minute. Add shrimp and cook for 4-5 minutes flipping half way through. Remove the shrimp and add the rest of the ingredients except the cheeses and basil. Cook for about 5 minutes, then add back the shrimp and add the basil. Add some more basil and the cheeses when serving.

I developed this recipe from a pasta dish I use to get at il Molinos. Good stuff. You can add capers and parsley too.
