Summer Chicken Pasta Recipe

Ingredients: Small Pack Chicken Breasts (3 Breasts) Cubed Bunch of Basil Tomatoes Thin Spaghetti Minced Garlic Ms. Dash Seasoning Olive Oil Sea Salt & Ground Black Pepper Parmesan Cheese Grated (If Desired) Bread to go with pasta (If Desired)

Directions:For sauce: Dice tomatoes and remove some of the seeds and juice. Place in a large bowl. Season with minced garlic, salt, and pepper. Chop basil in thin strips and add to mixture. Add 2-3 tbs olive oil and mix all ingredients together. Cover with plastic wrap. Set aside anywhere from 1 hour up to 5 hours. This sauce can be made ahead. For Pasta: Fill a pot with water and boil for pasta. Add a tbls of olive oil and some salt to boiling water then cook pasta until al dente. While the pasta is cooking, For Chicken: sauté diced chicken in a sauté pan coated with olive oil. Season chicken with Ms. Dash and cook chicken until firm, but be careful not to overcook chicken or it will dry out. Drain pasta when done and add to sauce. Mix together well and add chicken. You will also most likely need to add more olive oil to coat pasta. Add grated Parmesan cheese to pasta if desired while pasta is warm. Serve with warm bread. |
