16 ounces almond paste
2 egg whites made from pasteurized powdered egg whites (should not use raw egg whites)
1/2 teaspoon almond extract
4 cups powdered sugar (approximately)
food coloring - multiple colors
red and green sugar crystals as desired

Directions:
Basic Dough - Break up the almond paste in a large bowl. Add the egg whites and almond extract, mix thoroughly. Add 1 cup of sugar at a time, needing well after each addition; add enough sugar to make a solid, heavy dough. You may store the dough for up to seven days by wrapping it in plastic wrap and storing in a plastic bag in the refrigerator.

Divide the marzipan into as many color groups as desired. Add a few drops of food coloring of your choice to each group and knead into the dough, making a uniform color.

Children love to mold the marzipan into different fruits and vegetables. This is a traditional candy that is completely edible, unless of course you're allergic to almonds.

There are many variations of how to prepare marzipan, from the simple to the elaborate corn syrup glaze. In our family we chose the simple fruit and made it a tradition around Christmas.
