Ingredients:  
1 fresh red tomato, chopped
1 small onion, chopped
1/4 cup cilantro leaves
2 cups cooked cactus
2 tablespoons of olive oil
2 lemons, juiced
1/2 teaspoon salt
Cheese, sliced onion and avocado's to taste

Directions:
Directions:
1. Cut the nopales (cactus) into long strips or diced, depending on your taste
2. Finely chop the cilantro
3. Stir the tomato, cilantro, onion, cactus into a glass baking dish
4. Combine the olive oil and lemon juice with the salt
5. Pour this dressing over the mixture and stir well.
6. Chill in the refrigerator for 30 to 45 minutes.
7. Shortly before serving you can garnish with thinly sliced onion, shredded cheese, and sliced avocado.
8. Enjoy
