1 C chopped celery
1 T butter
2 C cooked chicken breast, cubed
1 C cooked white rice
1 10oz can, cream of chicken soup
1 tsp minced onion
1 tsp lemon juice
1 tsp salt
3/4 C real mayonnaise
1/2 C sliced & quartered water chestnuts
1 C crushed cornflakes
1/2 C sliced raw almonds

Preheat oven to 350º

Saute celery in butter 4-5 minutes. Mix remaining ingredients EXCEPT cornflakes & almonds. Add in celery & pour into lightly pam sprayed pyrex cooking dish. Sprinkle cornflake/almond mixture on top & bake for 30 minutes till bubbly and hot throughout.
