3 tbsp veg oil
2 onions
1 tbsp each minced garlic and gingerroot
2 tbsp curry powder
2 tbsp tomato paste
3/4 tsp salt
pinch hot pepper flakes
1 lb lean ground beef
1 lb Yukon Gold potatoes, peeled and diced
1 (14 oz) can diced tomatoes
1 tbsp soy sauce
1 c frozen green peas

In large pot, heat oil over medium heat; cook onions, stirring occasionally, until golden, 12 mins.

Add garlic and ginger; cook for 3 mins. Add curry powder, tomato paste, salt and hot pepper flakes; cook, storing for 2 mins. Add beef, breaking up with a spoon. Cook until browned. Add potatoes; cook for 2 mins.

Add tomatoes, soy sauce and 1 cup water; bring to a boil. Reduce heat, cover and simmer until potatoes are tender, about 15 mins. Stir in peas; cook for 5 mins.
