4 c fusilli (about 375 g)
1 tbsp vegetable oil
1 inion, chopped
2 cloves garlic. minced
2 cans (213 g) salmon, drained
1/2 chicken stock
1/4 c light mayo
1 tsp grated lemon rind
1 tsp lemon juice
1 tbsp dijon
1/4 c minced fresh parsley
1/4 tsp each salt and pepper
2 cups frozen mixed vegetables

Cook fusilli in large pot until al dente, 10 mins. Reserve 1 c of cooking liquid, drain and return to pot.

Meanwhile, in skillet. heat oil over med-high heat and saute onion and garlic until softened, about 4 mins. Add to pasta.

In food processor, pulse one can of salmon. Add stock, mayo, rind and juice, mustard, half of the parsley, s & p. Pulse until smooth. Scrape over pasta mixture.

Add remaining can of salmon, frozen veggies and reserved cooking liquid to pasta mixture; heat through, gently tossing to combine. Sprinkle with remaining parsley.
