3 cans of carrots
2 c. sugar
1 1/2 tsp. baking powder
2 Tbsp. flour
1 stick butter (softened)
1 Tbsp. vanilla
3 eggs

Directions:
Directions:
Pour cans of carrots into a boiler and heat--make sure carrots are very tender. Drain all juice off the carrots. Beat carrots with a hand mixer until thoroughly mashed. Add sugar, baking powder, and vanilla. Mix well. Add flour. In separate bowl, crack and beat eggs. Add egg mixture to the carrot mixture. Add softened butter. Mix all well. Pour into a souffle dish that has been sprayed with cooking spray. Bake at 350º for 1 hour. Carefully remove from oven. After cooled slightly, sprinkle top with powdered sugar.
