Medium to Large Irish Potatoes
Butter or margarine
Sour Cream
Milk
Potato Topper Sprinkles
Grated Cheese
Salt, Pepper, and Tony Chachere's seasoning

Directions:
Directions:
Cook whole potatoes until soft--I use the microwave because it is faster--but can cook in oven if you want. While still hot, slice each potato in half lengthwise. Scoop out inside of potato into a large mixing bowl. Place potato skins on a baking dish covered with foil. While potato insides are still hot, add several Tbsp. of butter or margarine and sour cream. Mix with hand mixer. Add enough milk to thin down the mixture--I like mine about the consistency of creamed potatoes. Add salt, pepper, Tony's, and potato topper sprinkles to taste. Fill each potato skin with the potato mixture. Top with grated cheese and bake at 350º for about 20 minutes. Great with any grilled meat!
