4 collard bunches (washed and chopped into pieces)
3 smoked ham hocks, (small and do not substitute)
½ box dark brown sugar
Texas Pete hot sauce
Salt and pepper to taste

Directions:
Directions:
Boil ham hocks in water that is 11/2 inches above hocks.
This will take 2 hours to get the hocks to come off bone.
Chop up meat in small pieces if desired.
(pressure cooker will speed process)

Fill pot with water and add all ingredients
Cook collards additional hours

Jimmy Artis, family friend of Jackie and Hubert Osteen, always makes his famous collard greens for the Osteen family at Christmas and New Year's.
I finally called and asked him for the recipe so I could make them for friends and family on Edisto one New Year's and everyone thought they were the best collards they had ever eaten!!
