Ingredients:
Ingredients:
New small potatoes
1/2 stick butter
1/2 c. flour
1 tsp. salt
3 c. whole milk
fresh chopped parsley

Directions:
Directions:
Boil new potatoes. Hint: Only cook until you can pierce them with a fork, don't overcook or you will have mush. While potatoes are cooking, make white sauce. Melt butter; add flour and tsp salt and mix, should stir without clumping. Add more flour or butter as needed. Blend in milk. Cook sauce until thickened, stirring all the while. When potatoes are done; drain. Pour white sauce over potatoes, add parsley and stir gently so as not to break up potatoes.

Personal Notes:
Personal Notes:
Our grandparents Freddie and Mother always put out a big garden. Mother would make these potatoes in the summer months often. They were always so good.
