1 c. warm water
1 c. CoffeeMate coffee creamer dry type
1/4 c. oleo, melted
3 eggs
1/2 c. sugar
1 tsp. vanilla
1/4 tsp. salt
4 slices bread
1/4 - 1/2 c. raisins (I prefer Golden)
Nutmeg Sauce:
1/2 c. sugar
1 tbsp. corn starch
1/4 c. oleo
1 c. milk
1 tsp. vanilla
1/2 tsp. nutmeg

Directions:

In medium bowl mix well water & coffee creamer. Add oleo, mix 30 seconds. Beat in eggs. Add sugar, vanilla & salt. Set aside. In 9x9 baking dish place 1 1/2 C of mixture. Sprinkle with raisins. Add bread slices, scrunch down to fit. Add remainder of mixture over bread. Sprinkle with cinnamon. Bake at 325º 40-45 min. Nutmeg Sauce: Cook but do not boil sugar, corn starch, oleo & milk. Add vanilla & nutmeg. Pour over hot pudding.

This recipe is easier than it sounds. I tasted it at a Kelsay family gathering and it quickly became my favorite bread pudding.
