1 pound of chicken (about 2-3 breasts or 3-4 thighs)
1Tablespoon vegetable oil
1 Medium onion
1 Clove of Garlic
2 Medium Carrots, sliced
1 medium Green Pepper, chopped
1 (16 oz) can of pineapple chunks with juice
3 tablespoons brown sugar
¼ cup white vinegar
3 tablespoons soy sauce
3 tablespoons Ketchup
1 tablespoon Cornstarch
1 tablespoon Ground Ginger
Basmati Rice

Directions:

1. Cut chicken into small chunks and brown in vegetable oil (or whatever oil you have on hand).
2. Reduce heat to low; add onion and pressed (or finely chopped) garlic.
3. Cover and cook for 10 minutes. Add carrots, green pepper, and pineapple.
4. In a small bowl, mix brown sugar, vinegar, soy sauce, ketchup, cornstarch, and ginger; then pour over chicken mixture. Cover and simmer for 10 minutes. Serve over cooked rice.

Tips:
We usually use chicken breast and double and sometimes even triple the recipe to use for lunches. We often keep these ingredients on hand because this is a quick and easy dinner to make (once you know what to do)

Variation:
Use pork in the place of chicken.

After getting married in 2006 we discovered this recipe in an old cookbook, and it quickly became a family favourite, and a go to meal when entertaining guests.
