2 pound package frozen hash browns, thawed
salt and pepper to taste
1/4 c. melted butter
1/4 c. chopped onion
1/4 c. chopped bell pepper
1 can cream of chicken soup
16 oz. sour cream
10 oz. shredded mild cheddar cheese
1/4 c. melted butter

Topping:
3 c. crushed Corn Chex
1/4 c. melted butter or margarine

Directions:
Directions:
Preheat oven to 350º.

Saute onions and bell peppers in margarine. In a large bowl, combine all ingredients. Transfer to greased casserole dish. Sprinkle with topping. Bake for 40 minutes or until bubbly.

Personal Notes:
I usually boil and then drain the potatoes before adding the other ingredients. It makes the casserole creamier.
