Filling: 1 13 oz jar apricot preserves
8 dried apricots, chopped into small pieces
Crust:
1 ¾ cups flour
1 cup brown sugar
¾ tsp sea salt
¾ b soda
1 ¾ cups old fashioned oats
1 cup chopped walnuts
1 cup melted butter
1 egg
1 tsp vanilla

Directions:
Directions:
Preheat oven to 350 degrees. Spray 9x13 pan with cooking spray. Line bottom and sides with parchment paper, spray with cooking spray.
Filling: In a small bowl, mix together apricot preserves and chopped apricots.

Crust: In a large bowl whisk together the flour, sugar, cinnamon, salt and baking soda. Stir in the oats and walnuts. Add the butter, egg & vanilla and stir completely.
Spread half of the crust mixture in the bottom of pan. Using a spatula spread the filling over the crust leaving ½ inch border around the edge of pan. Cover with remaining crust mixture, gently press to flatten. Bake until golden brown about 35 minutes. Cool 1 hour. Cut into bars and store in container up to 3 days.
