2 lbs of ground beef (85% lean)
1 large onion (finely chopped)
1 cup chicken stock
1 box of stove top chicken stuffing mix
˝ c ketchup
Directions:
Directions:
Preheat oven to 350F

In large bowl, mix all above ingredients until incorporated

Place meat mixture in a loaf pan or mold into a loaf on a cookie sheet lined with non-stick foil

Spread a little ketchup over the top and bake 50-55 minutes until golden brown

Serving suggestion: Place in between a hamburger bun in place of a patty

This is a recipe that my sister passed along to me. I have to say before I tried this I was not a fan of meatloaf, now I am!
