1 3 lb. chicken
¼ C. oil
2 C. cream of coconut
1 C. beer
1 medium onion chopped
1 large bell pepper chopped
Salt and pepper to taste

Directions:

1 3 lb. chicken cut in serving size pieces
¼ C. coconut oil (veg. oil may be substituted)
heat oil in dutch oven over medium heat
and brown chicken on all sides.
Remove chicken from pot.
Pour off all oil except 2 tbl.

Return chicken to pan.
Add 2 C. Cream of coconut, and 1 C. beer.
Cover and simmer 30 minutes until almost tender.

Add chopped onion and bell pepper
Salt and pepper. Simmer 20 minutes
more until liquid has reduced to a gravy.
If liquid dries out, add more beer.
