Refrigerated pie crust- 2 crusts
1 cup chopped onion
1 cup chopped celery
1 cup sliced carrots
1/3 cup melted butter
1/2 cup all-purpose
2 cups chicken broth
1 cup half and half
Salt and pepper to taste
4 cups chopped cooked chicken

Directions:
Directions:
Line bottom of deep oven safe pot with one pie crust, covering the sides of the pot.
Saute onion, celery and carrots in butter for 10 minutes, stirring well.
Add flour to sauteed vegetables, and cook one minute, stirring constantly.
Combine liquids; gradually stir into vegetable mixture and cook over medium heat, stirring until thick and bubbly.
Add salt, pepper and chicken.
Pour mixture into crust lined pot.
Cover with other pie crust, cut slits in crust to vent.
Bake at 375º for 40 minutes or until crust is golden brown.
Yield: 6 servings
