1 C shortening
1 C white sugar
1/2 C brown sugar, packed
1 egg, beaten
1 1/2 C flour
1 tsp. soda
1 tsp. cinnamon, or more to taste
1 1/2 C quick rolled oats
3/4 C chopped pecans, optional
1 tsp. vanilla

Directions:
Directions:
Cream together the shortening and the sugars. Add the egg.
Sift together the flour soda and cinnamon and add to above.
Add oats, nuts and vanilla.
Chill for an hour. Put walnut sized pieces on a greased cookie sheet.
Butter the bottom of a small glass, dip in granulated sugar and flatten out the little pieces. You don't need to re-butter the glass, just re-sugar it each time.
Bake at 350º for 10 minutes
