5 Lg. Baking Potatoes, peeled and quartered
1 C. Diced Onions
1/4 C. Butter or Margarine
2 Eggs
1/2 C. Light Cream
3 Tbl. Soft Butter or Margarine
6 Slices Bacon, Crisp Cooked, Drained and Crumbled
2 Tbl. Snipped Parsley
1/2 tsp. Pepper

Directions:
Directions:
In a large saucepan cook potatoes, covered, in enough boiling water to cover for 20 to 25 minutes or till tender; drain. Meanwhile, cook onions in the 1/4 cup butter until tender but not brown; set aside.

In a large mixing bowl beat potatoes until nearly smooth. Beat in the onion mixture, eggs, light cream, the 3 Tbl soft butter, bacon, parsley and the pepper. Drop potato mixture by heaping tablespoons onto a lightly greased baking sheet. Bake at 400º for 25-30 minutes or until lightly browned. Makes about 36 potato balls.

I had this recipe chosen to be in the Better Homes and Gardens magazine back in 1988. It is great for the Holidays with lots of gravy.
