Vegetarian Kale and Potato Soup Recipe

2TBS olive oil
1 onion chopped, white or yellow
2 TBS chopped fresh garlic
1 bunch kale, stems removed and finely chopped
4 cups veg. broth
4 cups water
1 can diced tomatoes (15 oz. )
6-8 potatoes peeled and cubed
3 cans white beans
1 TSP Dash seasoning

Cook onion and garlic in large soup pot until soft. Add kale and cook till wilted, 3-5 mins. Add water, veg. broth, tomatoes, beans( not drained), seasonings and a pinch of parsley. Let simmer for an hour if time allows for flavors to meld, then add potatoes and cook another 20 mins or till potatoes are done. Salt and pepper to taste.
Also good with leftover chopped, cooked chicken or beef and of course, some hot green chile. Serve with cornbread or hot tortillas.
