1 large green pepper
1 to 2 medium carrots
1 clove garlic
1 (15 ounces) can chunk pineapple
2 tablespoons cornstarch
1/3 cup honey
1/3 cup red wine vinegar
1 tablespoon soy sauce
1 and 1/2 pounds uncooked chicken
1 beaten egg
1/4 cup water
1/4 cup cornstarch
1/4 cup all-purpose flour
1/2 teaspoon salt
Cooking oil for deep-fat frying

Slice green pepper, carrots, garlic; set aside. Drain pineapple chunks, reserving juice. Add enough water to the juice to make 1 cup liquid, stir in 2 tablespoons cornstarch, honey, red wine vinegar and soy sauce and set this aside. For chicken batter, combine egg, water, 1/4 cup cornstarch, flour and salt. Batter and fry chicken in deep hot oil until golden brown. Drain; set aside. Preheat 2 tablespoons cooking oil in large skillet over high heat; stir-fry garlic, green pepper and carrot. Stir juice mixture into hot skillet, until thickened and bubbly. Add fried chicken and reserved pineapple chunks; stir together.

This is one of Preston's favorites. Sweet & Sour Stir-fry is different from most stir-frys because it features deep-fried chicken and plenty of zesty sauce. It's just about one of the prettiest and tastiest stir-frys around. Serve it over a bed of steamed rice.
