1 LB dried red beans (I use the smaller ones)
7 C. water
1 green bell pepper, chopped
1 med. onion, chopped
3 celery stalks (I used more - like triple)
3 garlic cloves (I used more like 4 or 5)
1/2 LB andouille or smoked sausage, sliced (I used andouille)
1.5 T Creole seasoning (my recipe reads 3 Tbsp - ha!!!)
Hot cooked rice
Garnish : sliced green onions (optional)

Directions:
Place first 8 ingredients in a slow cooker. Cook, covered on high for 7 hours or until beans are tender. Serve with hot cooked rice and garnish if desired. Yield: 3.5 quarts
