1 can cream of mushroom soup
1 can cream of celery soup
1 onion, chopped
2 tsp. lemon juice
1 tsp. salt
1 tsp. pepper
1 cup water
1 cup mayonnaise
3 cups cooked rice
3 cups turkey, cut into large pieces
1 can onion rings
1 cup grated cheese (I use sharp cheddar)
Dash of poultry seasoning
Parsley flakes

Directions:

Mix first eight (8) ingredients, then stir in rice and turkey. Pour into a 3-qt. casserole dish and top with grated cheese. Bake at 350º for 30-40 minutes. Top with onion rings the last few minutes, so they don't burn.

This combines two recipes from page 62 of "Into the Second Century" from French Camp Academy. They were chicken recipes, but I made it a family tradition to make this after Thanksgiving and Christmas and use leftover turkey. It became a family "hit" and will make enough to divide into two smaller casseroles (you can freeze one for another time).
