2 Tbsp olive oil
1 lb ground beef
1 onion, peeled and finely chopped
1 green pepper, finely chopped
3 cloves garlic, finely chopped
1 can (15 1/2 oz) red kidney beans, drained and rinsed
1 can (15 1/2 oz) black beans, drained and rinsed
1 can (14 1/2 oz) stewed tomatoes
1/4 cup tomato paste
1/4 cup honey
1 Tbsp chili powder
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp salt
Shredded Cheddar cheese and sliced scallions (optional)

In a large Dutch oven, heat the oil over medium-high heat. Add the ground beef and break up with a spoon. Cook for 5 minutes or until browned.

Add the onion, green pepper and garlic and cook for an additional 5 minutes, stirring occasionally, until vegetables are soft. Add the beans, tomatoes, 1 cup water, the tomato paste, honey, chili powder, cumin, oregano, salt and hot sauce. Simmer, covered, for 2 hours on medium-low heat. Stir occasionally.

Serve chili topped with shredded cheese and slice scallions, if desired.
